Por esse motivo, os nutricionistas recomendam que a dieta seja composta de alimentos pertencentes a v\u00e1rios grupos (carnes, leite e derivados, frutas, vegetais e cereais). Com rela\u00e7\u00e3o ao grupo das carnes, sabe-se que a carne bovina magra, similarmente \u00e0 carne branca das aves (sem pele) e ao lombo su\u00edno, \u00e9 fonte importante de prote\u00edna e deve fazer parte de uma dieta balanceada com os nutrientes dos demais grupos de alimentos. Os teores de colesterol e gordura da carne bovina magra s\u00e3o tamb\u00e9m semelhantes aos da carne branca das aves sem pele, como tamb\u00e9m ao do lombo su\u00edno (Tabela 1).<\/p>\n<p>O consumo excessivo de gordura (principalmente a saturada), de origem animal ou vegetal, \u00e9 um fator importante no desenvolvimento de doen\u00e7as cardiovasculares. Para prevenir riscos de desenvolvimento dessas doen\u00e7as, a Organiza\u00e7\u00e3o Mundial da Sa\u00fade (OMS) recomenda que a ingest\u00e3o di\u00e1ria de gordura, total e saturada, seja limitada a um determinado percentual da dieta. Para a gordura total, esse limite \u00e9 de 30% da energia de manten\u00e7a, e para a gordura saturada, de 10%. Exemplificando, a energia de manten\u00e7a para homens com idade superior a 50 anos \u00e9 de 2.300 quilocalorias\/dia. Portanto, os limites di\u00e1rios de ingest\u00e3o de gordura, total e saturada, seriam de 690 quilocalorias\/dia e 230 quilocalorias\/dia, respectivamente. Um bife de 100 gramas de contrafil\u00e9 bovino magro, de animais da ra\u00e7a Nelore, possui 3,9 gramas de gordura total (35,1 quilocalorias) e 1,9 grama de gordura saturada (17,1 quilocalorias). Assim, o consumo di\u00e1rio de 100 gramas de contrafil\u00e9 grelhado ir\u00e1 contribuir com apenas 5% da energia proveniente da gordura total e com pouco mais de 7% da gordura saturada. Observa-se que esses valores est\u00e3o muito abaixo daqueles recomendados pela OMS.<\/p>\n<p><center><span style=\"font-family: Univers;\"><span>TABELA 1. A gordura, al\u00e9m de conferir sabor ao alimentos, tamb\u00e9m auxilia no transporte e na absor\u00e7\u00e3o das vitaminas lipossol\u00faveis A, D, E, e K pelo intestino.<\/p>\n<p>A carne bovina \u00e9 tamb\u00e9m uma excelente fonte de prote\u00edna. Uma por\u00e7\u00e3o de 100 gramas de contrafil\u00e9 grelhado de animais zebu\u00ednos, sem a gordura de cobertura, cont\u00e9m 30 gramas de prote\u00edna. O teor cal\u00f3rico \u00e9 baixo (190 quilocalorias), como tamb\u00e9m s\u00e3o as concentra\u00e7\u00f5es de colesterol (67 miligramas\/100 gramas) e gordura (3,9 gramas\/100 gramas). Al\u00e9m de conter elevados teores de prote\u00edna de alta qualidade, a carne bovina \u00e9 rica em \u00e1cidos graxos essenciais, em vitaminas do complexo B (tiamina, riboflavina, niacina, \u00e1cidos f\u00f3lico e pantot\u00eanico, e vitaminas B6 e B12), em minerais (K, P, Mg, Fe e Zn) e em amino\u00e1cidos essenciais. Por causa da multiplicidade de nutrientes que a comp\u00f5e e \u00e0 alta biodisponibilidade dos mesmos, a carne bovina tem sido considerada como um alimento de alta densidade nutricional.<\/p>\n<p>Todos os nutrientes contidos na carne s\u00e3o importantes para a sa\u00fade humana, destacando-se os minerais ferro e zinco. O ferro \u00e9 essencial para diversas fun\u00e7\u00f5es do organismo. Al\u00e9m de dar suporte ao sistema imunol\u00f3gico, forma parte da hemoglobina dos gl\u00f3bulos vermelhos, respons\u00e1vel pelo transporte de oxig\u00eanio e di\u00f3xido de carbono. Esse oxig\u00eanio \u00e9 utilizado para liberar energia do alimento, a qual \u00e9 utilizada para crescimento, respira\u00e7\u00e3o, locomo\u00e7\u00e3o e demais fun\u00e7\u00f5es do organismo. Nas carnes, o ferro \u00e9 encontrado na forma &#8220;heme&#8221;, de mais f\u00e1cil absor\u00e7\u00e3o pelo organismo do que o ferro &#8220;n\u00e3o-heme&#8221;, dispon\u00edvel nos vegetais, cereais, frutas e ovos. A inclus\u00e3o da carne na dieta aumenta a biodisponibilidade do ferro &#8220;n\u00e3o-heme&#8221; encontrado nos vegetais. O sintoma cl\u00e1ssico de defici\u00eancia de ferro \u00e9 a anemia. Dietas deficientes em ferro retardam o crescimento de crian\u00e7as, al\u00e9m de prejudicar a habilidade de aprendizado. S\u00e3o necess\u00e1rios 3,4 por\u00e7\u00f5es (100 gramas) de peito de frango sem pele ou 2,3 por\u00e7\u00f5es de lombo su\u00edno para proporcionar a mesma quantidade de ferro dispon\u00edvel em 100 gramas de carne bovina.<\/p>\n<p>Quanto ao zinco, \u00e9 um mineral importante para o crescimento e para o desenvolvimento de diversas fun\u00e7\u00f5es imunol\u00f3gicas. A sua defici\u00eancia pode afetar a fun\u00e7\u00e3o de mais de 60 enzimas e, como conseq\u00fc\u00eancia, a maioria dos processos metab\u00f3licos do corpo humano. A carne bovina, comparada \u00e0s demais carnes e a outros produtos de origem animal ou vegetal, com exce\u00e7\u00e3o das ostras, tem as maiores concentra\u00e7\u00f5es deste mineral (6,5 gramas\/100 gramas). S\u00e3o necess\u00e1rios 6,5 por\u00e7\u00f5es (100 gramas) de peito de frango sem pele ou 2,5 por\u00e7\u00f5es (100 gramas) de lombo su\u00edno, para proporcionar a mesma quantidade de zinco encontrada em uma por\u00e7\u00e3o (100 gramas) de carne bovina. Os cereais tamb\u00e9m cont\u00eam zinco na sua composi\u00e7\u00e3o, por\u00e9m com menor biodisponibilidade que a forma encontrada na carne.<\/p>\n<p>Os produtos de origem animal apresentam todas as vitaminas lipossol\u00faveis (A, D, E e K) e as hidrossol\u00faveis do complexo B. O m\u00e9rito da carne bovina, como fonte de vitaminas, \u00e9 a alta concentra\u00e7\u00e3o e disponibilidade de vitaminas do complexo B, em especial a B12. A defici\u00eancia dessa vitamina na dieta apresenta como primeiros sintomas mudan\u00e7as no sistema nervoso (dificuldade de locomo\u00e7\u00e3o e express\u00e3o) que, se n\u00e3o socorridas a tempo, podem resultar em deteriora\u00e7\u00e3o mental e paralisia. O teor de vitamina B12 na carne bovina \u00e9 o mais elevado de todas as carnes, ao redor de 2,8 microgramas\/100 gramas. S\u00e3o necess\u00e1rias 8,4 por\u00e7\u00f5es (100 gramas) de carne branca de aves ou 5,1 por\u00e7\u00f5es (100 gramas) de lombo su\u00edno para proporcionar a mesma quantidade de vitamina B12 dispon\u00edvel em uma por\u00e7\u00e3o (100 gramas) de carne bovina.<\/p>\n<p>Em resumo, quando consumida em quantidades moderadas, os teores de gordura da carne bovina magra est\u00e3o muito abaixo dos limites estabelecidos pela OMS. Outros produtos de origem animal ou vegetal, importantes para uma dieta saud\u00e1vel, tamb\u00e9m apresentam na sua composi\u00e7\u00e3o este componente. No entanto, pela variedade de outros componentes nutricionais (prote\u00edna, vitaminas, minerais, amino\u00e1cidos e \u00e1cidos graxos essenciais) e pelos elevados teores com que os mesmos s\u00e3o encontrados na carne bovina, pode-se dizer que ela \u00e9 um alimento nobre, de extrema import\u00e2ncia \u00e0 nossa sa\u00fade.
